Fiesta Quinoa Salad

2 cups cooked quinoa, cooled
1 (15oz) can black beans, rinsed and drained
1 c corn
1 medium tomato, diced
2 green onions, minced
1 large ripe avocado, cubed

Citrus Dressing
3 Tb lime juice
1 1/2 Tb olive oil
2 tsp gluten-free tamari
2 tsp honey

In a large bowl, combine quinoa, beans, corn, tomato,
green onions, and avocado.
In a small bowl, whisk together dressing ingredients until combined.
Pour dressing over quinoa mixture and stir until well combined.
Pack into containers and store in the fridge.
Serves 4-6
