Red Lion Nectarines

Luscious, juicy, and beautifully ruby colored by
Mother Nature herself, Red Lion nectarines are
truly the "king" of all nectarines. Sweet as nectar,
as the word "nectarine" implies, they are the
"roaring" epitome of sweetness.
Like peaches, Red Lion nectarines are nutritious:
They are sodium free, low on calories, and a good
source of vitamins A and C, and potassium.

Easy Red Lion Nectarine Mousse
1 pound Red Lion nectarines
3/4 cup heavy whipping cream
2 tbsp organic sugar
1/4 tsp vanilla
1/8 tsp cinnamon
Thin nectarine slices for garnish (optional)
6 cinnamon sticks (optional)
Cut 1 pound nectarines from pits into a blender or
food processor. Whirl until mixture is a smooth puree,
scraping container sides as needed. If desired, to
remove bits of peel, rub puree through a fine strainer
in a bowl.
In another bowl, whip cream until it holds soft peeks.
Add sugar and vanilla and continue to whip until distinct
peaks form. Fold in nectarine puree and cinnamon.
Spoon into wine or martini glasses. Garnish, if you like,
with nectarine slices and cinnamon sticks.
