Interesting Information

Dr William Davis of Wheat Belly: "A new article published by AACC International on Sept. 27 refutes many of the claims published in the recent book, Wheat Belly, which charges that it is wheat consumption that is causing obesity and a myriad of other common health problems in the U.S. The AACCI article challenges Wheat Belly’s author William Davis’s recommendation to cut wheat entirely from the diet."

Name a time and place to debate the issues, preferably in front of TV cameras and I'm there! Remember the questions posed to tobacco executives about "doping" cigarettes with greater quantities of nicotine to cultivate addiction? Yeah, deja vu!

Friday, the weekend, a great time to think about Seafood! Wild Maple Glazed Salmon: Here’s a quick and easy way to make maple glazed salmon that tastes incredulicious! The sauce is mildly sweet with a pungent kick. Most barbeque sauces are high in sugars. Instead, this recipe uses natural zero-carb chicory root sweetener. I bake salmon in the oven as it is easier and avoids carcinogens of outdoor barbecues. This recipe contains no high-carb maple syrup, instead it uses maple flavoring. It’s also nightshade-free so it’s easy to digest, as it contains no peppers or tomoatoes. The resulting sweet glaze is simply delicious and it gives your blood sugar a break. Serves 4

GIG Members

In honor of National Celiac Disease Awareness Day, I have published an interesting interview with two medical specialists on my Huffington Post blog, which I hope you find helpful.  (Please see http://www.huffingtonpost.com/sz-berg/celiac-disease_b_1770781.html.)  
In addition, we're so pleased to announce the launch of the new William Edwards Book Series with our first novel in the series, William Edwards and the Wizardly Glasses!  William, like so many kids today, has celiac (and a severe food allergy)! 
The William Edwards book series targets kids 8 - 12 years old.  By this age, they usually have already been diagnosed and have a pretty good understanding of what the diagnosis means in terms of food restrictions. However, it is at about this age that exclusion as a result of dietary restrictions becomes more pronounced and when these kids begin to feel the impact of being different from their peers.

The William Edwards Book Series is all about empowering kids with food allergies, celiac, and/or gluten sensitivity.  It pokes fun at the self-involved parents who purchase William off of the Internet (on sale, no less!) and who throw mustard parties -- with plenty of gluten! -- forgetting that their son is allergic to mustard and has celiac!  They represent the uneducated people these kids (and their parents!) encounter.  As the story continues, William learns to roll his eyes at their thoughtless behaviors, learns to protect himself, and makes friends with kids who help protect him. He also grows as a character and begins to take the lead on many adventures all the while being conscientious about what he eats.

Boost Memory

There's another possible benefit of strength training:
a stronger memory, according to the researchers from
the University of British Columbia. They found that elderly
women in the early stages of cognitive decline who attended
a twice-weekly strength-training class for six months showed
significant improvement on memory tests compared with
women who took only a walking or stretching class. Pay a

Dr Ford is a medical doctor, a pediatrican and gastroenterologist.  He would rather see a child helped by a change in diet rather than being put on prescription medications. He states, “I am by promoting diet, not drugs. This is what it is all about…and of course the pharmaceutical world is not happy about this idea!” A gluten-free diet is often the cure for the sick, the tired, the grumpy and the fat.

Red Lion Nectarines

Luscious, juicy, and beautifully ruby colored by
Mother Nature herself, Red Lion nectarines are
truly the "king" of all nectarines. Sweet as nectar,
as the word "nectarine" implies, they are the
"roaring" epitome of sweetness.
Like peaches, Red Lion nectarines are nutritious:
They are sodium free, low on calories, and a good
source of vitamins A and C, and potassium.

Easy Red Lion Nectarine Mousse
1 pound Red Lion nectarines
3/4 cup heavy whipping cream
2 tbsp organic sugar
1/4 tsp vanilla
1/8 tsp cinnamon
Thin nectarine slices for garnish (optional)
6 cinnamon sticks (optional)
Cut 1 pound nectarines from pits into a blender or
food processor. Whirl until mixture is a smooth puree,
scraping container sides as needed. If desired, to
remove bits of peel, rub puree through a fine strainer
in a bowl.
In another bowl, whip cream until it holds soft peeks.
Add sugar and vanilla and continue to whip until distinct
peaks form. Fold in nectarine puree and cinnamon.
Spoon into wine or martini glasses. Garnish, if you like,
with nectarine slices and cinnamon sticks.

5 Fresh produce Picks to Try

Enjoy a side of bok choy, a type of cabbage, sliced and sauteed
with garlic and ginger. Add other veggies and meat for a stir-fry.
Snack on the vivid flesh of ripe papaya tossed with chili powder
and lime. Frozen, the sweet, musky fruit is great in smoothies.
Belgian endive can be sliced lengthwise and grilled, but we love
the crunchy uncooked leaves as scoops for bites of soft cheese or
smoked fish.
Tomatillos have a mouth-puckering flavor that makes them delicious
raw or roasted in salsa. They're also bright and luscious when
braised with chicken.
Choose jicama when you crave crunch. Cut it into matchsticks for
slaw or salads. It's refreshing, mild, and won't discolor like tubers
might.

Sesame Broccolini

Set a steamer basket in a large saucepan filled with
2 inches simmering water; add 2 bunches Broccolini,
trimmed. Cover and steam until crisp-tender, about
6 minutes. Transfer to a platter. Season with coarse salt
and ground black pepper, drizzle with 2 teaspoons
toasted sesame oil, and sprinkle with 1 tablespoon
toasted sesame seeds. serves 4

Pepperoncini

Turn up the heat- and add a bit of tang while you're
at it- with these pickled peppers. Although pepperoncini
are closely related to other sweet peppers such as banana
and yellow wax, they are slightly spicier than those varieties.
Harvested when still green, or immature, they are most often
pickled in a vinegary brine to be used as an antipasto or a
topping for deli sandwiches and Greek salads.
Pepperoncini are usually found in the condiment aisle along-
side other jarred peppers and pickles; they are sold either
whole or sliced. They are shelf stable until opened, then must
be refrigerated.
Try these tangy gems battered, fried, and served with a ranch
dip, finely chopped in tuna or pasta salads, as a replacement
for pickles in tarter sauce or relish, or even baked into mac
and cheese with sharp white cheddar.

and lower your risk of heart disease. Strawberries
are among the produce grown with the most
pesticides, so buy organic whenever possible.
Good Tips for Getting Great Berries
Look for small or medium-size strawberries that
are red and fragrant, with no soft spots. For the
best flavor, it's worth seeking out locally grown
ones- strawberries are harvested in every state
in the United States. Wash them just before
eating. They'll keep in the fridge for up to 3 days.

Gluten-free Pasta Primer

There are oodles of new noodles at the
supermarket these days. They give pasta lovers
with gluten sensitivity plenty of tasty, no-fuss
options.
Know Your Type
Choosing an alternative pasta boils down to
personal preference. Rice pasta, usually made
with brown rice, is one of the most popular types,
thanks to its mild flavor. Corn pasta has a bright
yellow color and rough texture that's good for
holding sauces, but the flavor can be distinctly
corny. Quinoa pasta sounds like a nutritional
home run, but it is always made with other
flours, typically corn. In our test kitchen, the
pasta of choice is a blend of rice flour, potato
starch, and soy flour, which is toothsome and
lacks a telltale flavor.
Cook It Right
The worst thing you can do to gluten-free
noodles is overcook them- they'll become
soft and slimy. Read the cooking instructions,
but test often, says Jacqueline Mallorca, author
of Gluten-Free Italian. "As soon as they're
tender, drain them".
Use It Well
If you're giving gluten-free pasta a go for the
first time, Mallorca suggests serving it with a
hearty sauce, such as ragu or Alfredo, so you
won't notice the difference. Don't serve rice pasta
cold or keep it for leftovers: It will harden when
cooled- just like leftover rice- resulting in stiff,
cardboardlike noodles.

Better Pressure Predictor

Two blood pressure readings may be better than one.
British researchers found that a difference between the
readings from your right and left arms is a marker for
early vascular disease. Make sure your doc always takes
your pressure in both arms. Even if there's no discrepancy,
knowing if your pressure's high lets you act right away to
reduce heart attack risk by eating a Mediterranean diet
and exercising.
